Yesterday I finally got to start trying out some recipes from the 30 Day Vegan workshop I’m participating in, and oh my. They are delicious. So far I made pad thai:
And Thai coleslaw:
I made some slight modifications (ie, carrots instead of tofu in the pad thai, less oil in the dressing of the slaw), and I’m excited to already have two new vegan dishes in my repertoire. I’m in this workshop with my lovely friend and sister-in-law Amelia, I’m so glad she told me about it!
I had fun shopping for produce we don’t usually buy, like ginger, radishes, and cabbage. Also my husband, who is a little less than excited about most vegetables, ate this stuff up. Win. I’m planning on tabouli and black bean + quinoa chili for the rest of the week…and now I’m hungry.
